Ash gourd are long and cylindrical usually reaching 30 centimeters in length. The skin is dark green in color while the flesh is white. Ash gourd are mild and have little taste, making them ideal for meals rich in flavour. Ash gourd are a great source of iron, potassium and calcium among other minerals.
Ash gourd are best when cooked especially when stir fried or boiled. They are best when served on the side, added to a sabzi, or stuffed with spices.
